.Prep time: 10 minutes
.Cook time: 15 minutes
.Servings: 2

Ingredients:

.Wraps: 2 whole-wheat or high-fiber tortillas.
.Protein: 3 large eggs + 2 egg whites (for lean protein).
.Vegetables: 1 cup fresh spinach (roughly chopped), ½ red onion (diced), and ½ red bell pepper.
.Healthy Fats: ½ ripe avocado (sliced or mashed).
.SA Flavor: 2–3 tablespoons of mild chakalaka (store-bought or homemade) for a spicy kick.
.Optional: 1 lean chicken or ostrich sausage (grilled and sliced).
.Seasoning: A pinch of Aromat (classic SA flavor), cumin, and black pepper.

Instructions:

1. Sauté Veggies: Heat a teaspoon of olive oil in a non-stick pan over medium heat. Add the onions and bell peppers, sautéing until soft (about 5 minutes).

2. Scramble Eggs: Whisk the eggs and whites together. Pour into the pan with the veggies. Add the spinach and a dash of Aromat. Stir gently until the eggs are just cooked through but still fluffy.

3. Warm Tortillas: Quickly heat the tortillas in a dry pan or microwave for 15 seconds to make them pliable.

4. Assemble:

1. Lay the tortilla flat.
2. Spread a layer of chakalaka down the center.
3. Top with the egg and veggie scramble.
4. Add sliced avocado and grilled sausage (if using).

5. Fold & Toast: Fold the sides in, then roll tightly from the bottom. For a crispy finish, place the burrito seam-side down in the hot pan for 30–60 seconds to seal it.
